I make a lot of muffins around here. They are quick and easy and they boys love them. Particularly anything with chocolate chips in them. They are a nice change from our usual oatmeal or eggos.
I was a little over zealous in purchasing canned pumpkin during the holidays and was searching for a way to use it up. I came across the original recipe on allrecipes.com and tweaked it a little according to our tastes and the reviews. They were really yummy and not too bad for you. Enjoy.
Pumpkin Chocolate Chip Muffins

3/4 cup sugar
1/4 cup vegetable oil
2 eggs
1 cup canned pumpkin puree
1/4 cup water
3/4 cup all purpose flour
3/4 cup whole wheat flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/2 cup mini chocolate chips
Preheat oven to 375 and spray 12 muffin cups with nonstick cooking spray.
Mix sugar, oil, and eggs. Add pumpkin and water. In a separate bowl, combine flour, baking soda, baking powder, spices, and salt. Add wet ingredients and stir in chocolate chips.
Divide evenly into muffin cups (about 2/3 full). Bake for 20 to 25 minutes.
Let cool in pan for 5 minutes, then remove to a wire rack.
